Yesterday morning was great. Woke up, had coffee, and made breakfast before the gym. Recently, I was given Feast of the Forest cookbook and I have been itching to dig in and get something cooking. Well, obviously I chose a breakfast treat with my favorite fruit, avocado (yes they are a fruit). The avocado egg-in-a-hole, Hello yumm! The unfolding of this treat… I wish I could make this every single day.
Ingredients: (makes 2)
- 1 Avocado
- 1 Egg
- Dash of pepper
- Dash of salt
- Cheese (we chose parmesan)
*You will also need a muffin tin
First, Preheat your oven to 375. Cut avocados in half, remove pit and place them on your muffin tin so they won’t tip over. In a small bowl beat your egg. Next, carefully pour the beaten egg into the halves just enough to fill the hole where the pit was. Now, add salt, pepper, and cheese. Once the oven is ready, bake your avocados for 15-20 minutes. When ready, sprinkle more cheese on top if you’d like, and enjoy! It is good by itself or spread on toast.
